Baked mounds

-3/4 cup coconut flakes

-1/2 cup pumpkin seeds

-1/2 cup oats

-1 egg

-3 tbsp butter

-2 tbsp coconut sugar

-3 tbsp tapioca flour

-3 tbsp arrowroot starch

-1/2 tsp vanilla

-1/2 tsp cinnamon 

-pinch of baking soda

 

1. Mix your room temperature butter, coconut sugar, egg, cinnamon, vanilla and baking soda together in your stainless steel bowl. Preheat oven to 350 degrees while you do.

 

2. After those get mixed well, throw in your tapioca flour, arrowroot starch, pumpkin seeds, oats and coconut flakes. Mix together well, it should be nice and sticky. 

 

3. Line your baking sheet with a “clean” parchment paper and get your tablespoon ready. Take your tablespoon and place tablespoon sized mounds onto your parchment paper. Sprinkle a little coconut sugar on top of each mound and then place them into your pre heated oven for 30-40 minutes, or so. Let cool and Enjoy!
