Carrot "cake" bread

-1 3/4 cup Gf flour blend
-1 cup carrots, grated
-1/2 cup coconut meat, shredded
-1/2 cup butter
-1/3 cup honey
-1/4 cup nuts, crushed. I used almonds
-2 eggs
-2 tsp vanilla extract
-1 tsp baking soda
-1/2 tsp cinnamon(optional)
-1/2 tsp salt
*I used Bob's Red Mill gluten free flour blend, but play around with flours of choice.
1. Cream together your butter and honey in a bowl. Then add your eggs, vanilla extract, baking soda, cinnamon and salt.
2. Fold in your flour mixture and follow that with your grated carrots, shredded coconut meat and crushed nuts.
3. Bake at 325 degrees for 1 hour or so. Enjoy!
