Cherry topped delight

-4 to 8 cherries

-1 egg

-1/2 cup almond meal

-1/2 cup oat flour

-1/3 cup arrowroot starch

-3 tbsp chocolate chips(unsweetened or very lightly sweetened)

-2 tbsp butter, room temperature

-1 tsp vanilla

-1/2 tsp pink salt

-1/2 tsp stevia powder

-1/4 tsp baking soda

-1/8 tsp xanthan gum

*Use a Gf flour blend of your choice & omit ingredients if yours contains them.

*Don’t freak out when/if the edges start to crack. You’ll be able to form them right.

*This time is going off how thick I rolled my cookies. If yours is thicker, bake longer.

1. Throw your almond meal, oat flour, arrowroot starch, stevia, baking soda, xanthan gum and pink salt into your mixing bowl. Go ahead and give that a good mix with your hand blender.

 

2. Throw your egg, vanilla and butter in there as well. Continue to mix all of that until it blends together well. It might look a little chunky, but that’s only because of the almond meal. 

 

3. Once that is combined well, throw it into your fridge for about 10 minutes or so. That helps it bind together a little bit. While that’s in there, go ahead and slice your cherries like you see in the photos and preheat your oven to 375 degrees.

 

4. Take your dough out of the fridge and start to roll it out on a lightly floured surface. I rolled mine into a thickness that was about 1/8” thick. Take your cookie cutter and proceed. Decorate something like the photos you see. Once you get them ready, throw them into your preheated oven and bake them for 25 minutes. Let them cool & Enjoy!
