Beet soup

-3 beets, medium

-3 tbsp chives, diced

-1 quart water, filtered

-1 tbsp butter

 

*Feel free to play around with herbs & spices, it’s very versatile. It’s earthy and has a natural sweetness to it as it is.

1. Clean your beets & chop/slice them up. Throw them into your pot with your butter & let them cook on a medium-low heat for 20 minutes.

 

2. Add your water & bring it to a boil. As it’s coming to a boil skim off the foam that decides to rise to the top. Don’t fear if you don’t get it all, it just contains more of the dirt & grime. Turn it down to a simmer & let it simmer for another 20 minutes. Or until they’re soft enough to blend up.

 

3. Chop your chives(if using) & add them in right before you take your emersion blender & blend it all till smooth.

 

4. Let cool slightly & Enjoy!
