Cracker, gluten free

-1 cup white rice flour

-1/4 cup water

-3 tbsp butter, room temperature

-1/2 tbsp herbs and spices(optional)

 

*These are a very light, fluffy cracker. Nice to top a salad with, if in the mood.

*This is one of those recipes you can play around with, using different flours, spices, etc. All purpose seasoning, cayenne, pepper, sea salt, cilantro, etc. 

 

1. Throw flour inside of food processor and pulse once or twice. Then add in the butter and pulse till somewhat combined. Preheat oven to 400 degrees.

 

2. Add in a little bit of water at a time till mixture is well formed but not too sticky to handle. Meaning the batter isn’t too overwhelmed with water to where it sticks to everything.

 

3. Place your parchment paper on your countertop and dust it with some flour. 

 

4. Place ball of dough in center and start to roll it out. Make sure to roll out evenly.

 

5. Cut crackers into desired shapes, I make squares that are around 1 inch in diameter.

 

6. Poke a few holes in them and place in the oven for about 12 minutes. Take out after 12 minutes and glaze the tops with butter and sprinkle on desired flavorings. 

 

7. Place back in oven and bake about 10 more minutes, or until desired crunch. Enjoy!
