Fluffy flakes


-3/4 cup almond meal/flour
-1/2 cup arrowroot starch
-1 egg, medium
-2 tbsp butter, room temperature
-2 tbsp chocolate chips, unsweetened(optional)
-2 tsp vanilla
-1/2 tsp baking soda
-1/4 tsp baking powder
-1/4 tsp xanthan gum
*Light, fluffy, flake apart nicely. If you like more crunchy/snappy treats, this one isn’t gonna pass.
1. Preheat your oven to 350 degrees while you prep your treats.
2. Throw your egg, butter, baking soda & powder, vanilla and xanthan gum(if using) into your mixing bowl. Mix together well and then add in your arrowroot starch & almond meal. This is where you might have to add a little more depending on the size of your egg, etc.
3. You want the dough to be pretty sticky to where it can hold together once scooped by a tablespoon.
4. Refer to pictures to get more comfy while they bake for 30 minutes or so. Let them cool in the refrigerator & Enjoy!
