-2 large onions, preferably sweet
-1 large under-ripe tomato
-3 tbsp filtered water, start with that & add more if needed
-1 tbsp butter
-1 tsp sea salt or 1/2 lemon juiced
-1 tbsp olive oil(use an additional tablespoon if you don’t have the butter)
-2 tbsp maple syrup
-2 tbsp seasonings(chives, oregano, garlic, parsley, green onion, thyme, rosemary, etc.)
*Don’t feel obligated to add any seasonings. Feel free to try it by only using the first 5 ingredients listed and then add ingredients accordingly to taste.
1. Peel your tomato(refer to foundations) and dice up your onions while you get the tomato ready. Dice tomato once it’s peeled and seeded. Throw butter or olive oil in your larger pan and bring to a medium heat. Sauté onions, tomatoes, desired sweetener and seasonings until the onions become soft/tender, about 20-30 minutes. Add your 2 tablespoons of water as well and mix. This is where you keep and eye on it and add up to 1/4 cup of H2o if need.
2. Once the onions become soft, throw the mixture into your mixing bowl and blend with your emersion blender. If you don’t have one, throw it all into your blender.
3. Blend till smooth and add your salt when serving. Enjoy!
