Refried beans

-1 tbsp duck fat, lard or olive oil

-1/2 cup chicken stock

-30 oz pinto beans, cooked

-1/2 cup onion, diced

-1/2 cup bell pepper, diced

-1/4 cup cilantro, minced

-1/2 tsp chili powder

-1/2 tsp cayenne

-1/4 tsp ground cumin

-1/2 cup water

-1/2 lime or onion if don't have lime

 

*Very dense recipe. 

*Use oil of choice for your situation, just make sure it is heat stable.

1. Add your desired fat to the 10” cookware and bring the heat to medium.

 

2. Throw in your onions and let cook for a minute or two and then add the bell pepper. Cook for about 5-7 minutes.

 

3. Add in the cooked pinto beans, remaining spices and the stock.

 

4. Mix together well and let cook for about 5 minutes. Then add cilantro.

 

5. Use a fork(if you don't have a potato masher) to mash ingredients together real well and continue to add a little bit of water as you go until you reach your desired consistency.

 

6.  Store in airtight container in the refrigerator and Enjoy!
